It took me a while to come up with this recipe but it was worth the trial and error because these cookies are delightful! They are even brother-in-law approved (he doesn’t usually like healthy things).
Peanut Butter Cookies (wheat-free)
Serves: 26
Ingredients
- 1 Egg
- 1 tsp. Vanilla Extract
- 1 tsp. Baking Soda
- 2 tbsp. Maple Syrup
- ¼ c. Raw Sugar
- 1½ c. Almond Meal (not almond flour)
- ¾ c. Creamy Natural Peanut Butter
Instructions
- Preheat oven to 350° F.
- In a bowl, mix egg, vanilla extract, maple syrup. In another medium sized bowl, mix baking soda, raw sugar and almond meal.
- Add wet ingredients from the first bowl to the bowl with the dry ingredients. Add peanut butter, and mix in until all ingredients are well combined.
- Put parchment paper on a cookie sheet. Scoop ½ spoonfuls of the cookie batter onto the parchment paper (I like to use a cookie scoop for this part) 2 inches apart. Using a fork, flatten each in a criss-cross pattern. Bake for 8-9 minutes.
- Take cookies out of the oven and let cool on a cooling rack - while still on parchment paper.
