This recipe is my attempt to recreate the Kale Kolada smoothie from Juice Generation, which I used to love getting when I lived in NYC. I nailed it! This smoothie is great because #1. Its Delicious! #2. Very hydrating and replenishes electrolytes #3. Banana is a great source of potassium #4. It includes healthy greens. So, this is a must try!
Coconut Water Green Smoothie

Ingredients
- 1 Young Thai Coconut (I buy mine at Whole Foods)
- 1 Handful Fresh Baby Spinach
- 1 Handful Fresh Baby Kale
- 1 Banana, Medium
- 4 Ice Cubes
Instructions
- Crack coconut open (see video here on how to do this easily)
- Pour the coconut water into a blender
- Remove the inside meat of the coconut with a bendable spatula (that same video shows you how to do this) and place into the blender as well
- Then add the spinach, kale and banana
- Add 4 ice cubes
- Blend until completely smooth
- Enjoy immediately!
