I have really been into making my own “caprese” everything lately. The usual caprese salad, then a caprese inspired actual salad with romaine (I’ll have to post that recipe too) and these caprese poached eggs. I bought some nice mozzarella cheese at Whole foods and paired it with an heirloom tomato (but you can use any kind of slicer tomato). It’s tomato season so you should be able to find some good ones. Make sure you use high quality ingredients for this or else it just doesn’t taste as fresh and delightful.
Caprese Poached Eggs

Ingredients
- 1 slice Fresh Mozzarella Cheese
- 1 slice Tomato
- 1-2 leaves Fresh Basil
- 1 Poached Egg
- 1 pinch Ground Black Pepper
- 1 pinch Sea Salt
- Extra Virgin Olive Oil
Instructions
- Slice your Mozzarella and tomato
- On a plate, stack the tomato, then mozzarella, then basil. Place to the side.
- Poach your egg. (see how to do this here)
- Once the egg is poached, pat dry any water off of the egg and place on top of the tomato/mozzarella/basil
- Sprinkle a pinch of ground black pepper and sea salt
- Add a few drops of Extra Virgin Olive Oil over the eggs.
- Enjoy!
