I made this the other night, and after tasting it, all I’ve been thinking about is that I can’t wait to make it again! I need to go buy some more pumpkin! Pumpkin is great for your eyesight, your skin, weight loss and even may reduce the risk of cancer – just a few more reasons to enjoy pumpkin recipes this Fall.
Pumpkin Overnight Oats
Recipe type: Oatmeal
Serves: 2
Ingredients
- 1 c. Old Fashioned Oats
- 4 tbsp. Pumpkin Puree
- 1 tsp. Chia Seeds
- 2 tsp. Maple Syrup, Dark Amber
- 1 c. Almond Milk, Regular
- ¼ tsp. Ground Nutmeg
- ¼ tsp. Ground Cinnamon
- Walnut Halves broken into pieces (Optional)
Instructions
- In a bowl or Pyrex container, stir all ingredients until well mixed. Cover with saran wrap or Pyrex cover and refrigerate overnight. In the morning, mix in walnut pieces.
- Enjoy and then repeat!
