Chicken Mozzarella

Ingredients
  • 1.5 lb Boneless Skinless Chicken Breasts
  • 1 Jar of Marinara Sauce, 25 oz. (I like Whole Foods' 365 Organic Marinara Pasta Sauce)
  • 1 c. Shredded Mozzarella Cheese
  • ½ c. Grated Parmesan Cheese
  • 2 tbsp. Salt-Free Poultry Seasoning
  • ½ tsp Ground Black Pepper
  • ¼ tsp. Paprika
  • ¼ tsp. Granulated Onion (optional)
  • ¼ tsp. Granulated Garlic (optional)
Instructions
  1. Preheat oven to 400°
  2. Cut each chicken breast in half. Using a meat tenderizer, pound chicken to flatten to a little larger than ¼ inch thickness (not too flat)
  3. Cut the chicken breasts in half again
  4. Mix spices in a small bowl and then rub into the chicken
  5. Lightly grease a pan, place chicken breasts in pan
  6. Pour the marinara sauce into the pan and spread throughout
  7. Push off some of the marinara area sauce that may be burying the chicken breasts and top each equally with mozzarella cheese
  8. Sprinkle the Parmesan cheese over the chicken as well and sprinkle some throughout the sauce areas as well.
  9. Place in the oven and bake for 40 minutes.
  10. Remove from the oven and let cool for 10 minutes.
  11. Serve yourself and enjoy!
