My favorite recipes are those you create when you combine different ingredients that you are craving and come up with something delicious but also healthy. This is what happened here. I was craving spaghetti bolognese (not so healthy with high carbs and red meat), and cheese (not the best either) and tomato sauce (can irritate heart burn) so I decided to make a healthy casserole version of something similar. And Voila! This came out really good!
Spaghetti Squash Casserole with Ground Turkey

Ingredients
- 1 Large Spaghetti Squash
- 1 lb. Lean Ground Turkey
- 1 tsp. Onion Granules (or powder)
- ½ tsp. Garlic Granules (or powder)
- ½ tsp. Ground Black Pepper
- ¼ tsp. Fine Sea Salt
- ½ tbsp. Dried Rosemary
- 1 can Diced Tomatoes, 14.5 oz.
- ½ cup Shredded Part Skim Mozzarella Cheese
- Parmesan Cheese to sprinkle on top of each serving
- Cooking Spray (I use spray olive oil)
Instructions
- Preheat oven to 375°
- Cut Spaghetti Squash in half lengthwise. Scoop out all seeds.
- Spray all sides of each half of Spaghetti Squash with cooking spray and place face down on a cookie sheet. Bake for 20-30 minutes, until skin can be easily pierced with a knife.
- Once cool enough to handle, use a fork to scrape out the "spaghetti" like flesh of each half. The fork with help separate out the spaghetti.
- Place the spaghetti in a large bowl and set aside.
- In a skillet, cook the ground turkey, making sure to separate into small chunks. Also mix in the onion granules, garlic granules and black pepper. Cook until the turkey is browned.
- Add the ½ can of diced tomato (with juice), rosemary and salt. Cook 2-3 minutes, until liquid is absorbed.
- Combine the turkey with the spaghetti squash and fold in until well mixed.
- Transfer to an ungreased baking dish.
- Sprinkle the mozzarella cheese on top on the mixture.
- Bake for 25 minutes, uncovered.
- Remove from oven and let cool for 5-10 minutes.
- Serve yourself a plate and sprinkle with some Parmesan cheese.
