Ingredients
- Salad:
- 5-6 Romaine Lettuce Heart Leaves
- ¼ c. Shredded Cheddar Cheese
- 3 Tomato Slices, chopped into cubes
- ¼ c. Onion, chopped
- ¼ c. Black Beans, canned
- ¼ c. Red Beans, canned
- ¼ c. Corn, canned
Avocado Dressing:- ½ Avocado
- 1 tbsp. Extra Virgin Olive Oil
- 1 tbsp. Fresh lemon
- ¼ tsp. Sea Salt
- ⅛ tsp. Ground Black Pepper
- ¼ Garlic Clove, sliced
- 3 Cilantro sprigs, stems removed
- 2 tbsp. Filtered Water
Instructions
- Prepare avocado dressing - Combine all dressing ingredients in a mini food processor; process until very smooth.
- Chop romaine lettuce and place into a salad bowl.
- Chop the tomato slices and onion - toss the tomato cubes, onions, black beans, red beans, corn and shredded cheese into the bowl with the lettuce.
- Add the avocado salad dressing and mix in well.
- Top salad with more ground pepper (optional).
- Enjoy!
