Who says that lunch has to be unhealthy? You shouldn’t feel tired after eating lunch, it is a sign that you are eating too much or are eating the wrong things. Try this fresh healthy salad instead. It’s easy to make and you get lots of great vitamins, healthy fats and fiber. Make this salad as big or small as you’d like (just watch the amount of dressing used). No nap needed afterwards!
Healthy Lunch Salad

Ingredients
- 4-5 leaves Romaine Lettuce, chopped (use romaine hearts)
- 2 Cremini Mushrooms, chopped
- 4 Grape Tomatoes, quartered
- ⅓ Zucchini, chopped
- ⅛ c. Roasted/Unsalted Sunflower Seeds
- ¼ c. Shredded Cheddar Cheese
- ⅛ tsp. Ground Black Pepper
- 2 tsp. Dressing (1 tsp. extra virgin olive oil + 1 tsp. apple cider vinegar)
Instructions
- Clean each vegetable well.
- Chop all veggies and place into a bowl (or Pyrex container to take to work!)
- Add the pepper and dressing, then toss to mix in well.
- Enjoy!
Notes
Add some sliced avocado or chicken to switch it up!
