I absolutely love coconut rice but traditional recipes call for a lot of sugar, so I created my own and it is not only really delicious, but healthy too! No white sugar is used here, only natural maple syrup. The recipe also calls for using Organic California White Basmati Rice, which is the rice that has the least amount of arsenic in it (yes, rice has arsenic, so choose your rice wisely). This coconut rice goes well as a side dish with pretty much any kind of protein or vegetables. Enjoy!
Healthy Coconut Rice

Ingredients
- 1¾ c. Light Coconut Milk (canned)
- ¼ c. Filtered Water
- 1 c. Organic California Basmati Rice*
- 1.5 tbsp. Natural Maple Syrup
- ¼ c. Unsweetened Shredded Coconut
Instructions
- Measure 1 cup of dry rice and rinse well. Set aside.
- In a pot, add the coconut milk, water and maple syrup, then stir to combine well.
- Add the rice to the pot and stir in lightly and only for a second.
- Bring to a boil over high heat, then change to low heat and place on pot cover.
- Let the rice cook for 20 minutes without touching it. If you lift the pot cover or move the rice, it will come out mushy.
- While the rice is cooking, heat a pan over medium heat and add the shredded coconut. Stirring frequently, cook until browned.
- Once the rice is finished cooking, move off from heat and let stand for another 10 minutes (do not remove the pot top)
- Next, fluff the rice with a fork and fold in the toasted coconut.
- Enjoy!
