These look cool and taste great! Husband and husband’s friend approved. You get a full breakfast in one or two convenient ham cups. These are very easy to make and reheat nicely.
Ham, Egg and Cheddar Cups

Ingredients
- 6 Large Brown Eggs
- 6 Slices Reduced Sodium Ham (do not use very thinly sliced)
- ¼ c. Shredded Cheddar Cheese
- 3 tbsp. Tomatillo Salsa
- ¼ tsp. Pepper
Instructions
- Preheat oven to 375°.
- Lightly grease a cupcake pan.
- Cut a slit into each ham slice and fold around and into each of the middle 6 cups.
- Distribute the shredded cheese into each cup.
- Crack one egg into each cup.
- Add ½ tbsp. of Tomatillo salsa to the cups, keeping it to the side.
- Bake for 13-15 minutes, until the whites are cooked but the yolks are still runny.
- Remove from oven and let sit for 5 minutes. Carefully remove each egg/ham cup.
- Sprinkle with pepper.
- Enjoy!
Notes
* Don't use thin sliced ham or else the "cups" may not support the egg well enough.
