I’ll be honest, I was not too sure about those cucumber boat sandwiches that I have seen floating around the internet… However, I sort of tried it today because I really wanted a ham and cheese sandwich but I didn’t have any bread because I don’t eat it often. Looking in my fridge, I found some zucchini (no cucumber) and figured why not give it a try. I was pleasantly surprised, and full, because zucchini is a pretty dense vegetable. I had my ham and cheese sandwich and managed to keep it healthy at the same time. I actually think that this may be better than using a cucumber because cucumbers tend to be watery, while a zucchini is not as much. This is a great option for those of you who don’t or can’t eat wheat. Try your next sandwich as a zucchini sandwich!
- 1 Zucchini, large
- 4 slices Ham
- 2 slices Swiss Cheese
- Mayonnaise (optional)
- Mustard (optional)
- Wash the zucchini well, then pat dry.
- Cut the zucchini in half. Using a sharp knife, carefully cut out the middle of each half, creating an area where you can place the ham and cheese.
- Place 1 swiss cheese slice into each zucchini half (I split each cheese slice in half first), then add the ham on top.
- Top with some mayo or mustard, or both, and enjoy!
