This is probably my favorite recipe. It always hits the spot, is easy to make, and has healthy protein and carbs. You can also eat it alone without a side dish which saves you additional calories.
Ground Turkey with Carrots, Peas and Potatos

Ingredients
- 1 lb. Lean Ground Turkey (don't use all white meat)
- 2 Russet Potatoes, peeled and cut into small cubes
- 2 Carrots, large
- 1 Sweet Peas, 15 oz. can
- ¼ tsp. Ground Black Pepper
- ¼ tsp. Onion Powder
- ¼ tsp. Garlic Powder
Instructions
- Lightly spray a wide/deep pan with cooking spray, break apart and cook the turkey until slightly browned.
- Add the potatoes, carrots, and peas (all peas in can + ½ liquid from can). Throw away the remaining liquid from the can of peas.
- Now add the spices and mix all of the ingredients well.
- Cook the mixture for 10 minutes covered, but mixing occasionally, or until all vegetables are softened.
- Remove from heat, let cool for a few minutes, then serve yourself and enjoy!

Just made this with frozen peas and carrots, a sweet potato and added aboit a half of a cup of cottage cheese! It is so yummy!

I just cooked a little the vegetables in a boiled water before adding them to the rest.
That was good! Even the children that usually don’t like cooked vegetables ate it 3times!!

It is a stand alone dish but you can always serve it with some California white basmati rice (has much less arsenic in it than other types of rice). Enjoy!

Hello,
Am I suppose to cook the potatoes first prior to throwing it onto the pan, or put the raw potatoes along with the vegetables to cook together?

Hi Karolina, since the potatoes are cut into small pieces it is not necessary to cook them first. Just toss them in raw and they will soften as everything cooks. Enjoy!

Serve over sautéed spinach or chard or shaved sautéed brussle sprouts that had thinly sliced red onion and garlic.
