Carob Chip and Coconut Cookies

Ingredients
  • 2 Large Eggs
  • ⅓ c. Coconut Oil, Liquid
  • ¼ c. Maple Syrup
  • ½ tsp. Baking Soda
  • ½ c. Coconut Flour
  • 1 c. Almond Flour
  • ⅛ c. Water
  • ½ c. Carob Chips, Unsweetened (or chocolate chips)
  • ¼ c. Shredded Coconut Flakes, Unsweetened
Instructions
  1. Preheat oven to 375° F. Place parchment paper over a cookie sheet.
  2. In a large bowl, mix all wet ingredients. Add the dry ingredients (except carob chip and shredded coconut) and mix in well with the wet ingredients.
  3. Now add the carob chips and the shredded coconut and fold into the cookie mixture.
  4. Using a cookie scoop, fill each scoop ¾ full and drop cookie batter onto the parchment paper/cookie sheet. Bake for 10 minutes or until slightly golden.
  5. Let cool on a cookie rack for 5 minutes before eating.
  6. Enjoy!
