Easy Stovetop Popcorn

Ingredients
  • ½ c. Popcorn Kernels (I like Arrowhead Mills Organic Popcorn)
  • 1 ½ tbsp. Coconut Oil
  • ¼ tsp. Fine Sea Salt
Instructions
  1. In a large deep pot, heat the coconut oil and 3 popcorn kernels, over medium-high heat and covered, until the oil is melted and the three kernels have popped.
  2. Remove the 3 popped kernels, and take the pot off of the heat.
  3. Add the ½ cup of kernels, then shake the pot to cover the kernels in the melted oil.
  4. Cover the pot and wait 30 seconds.
  5. Place the pot back onto medium-high heat and continue to cook the kernels, covered, until you hear the popping slow down (about 1½ minutes)
  6. Once the popping has slowed, remove the pot from the heat, take off the lid and let the steam escape.
  7. Sprinkle the popcorn with the sea salt (make sure that you use fine sea salt because large course salt will not coat the popcorn well), place in a large bowl and enjoy!
