White Chocolate Macadamia Nut Cookies

Ingredients
  • 2 Eggs
  • ⅓ c. Coconut Oil, Liquid
  • ¼ + ⅛ c. Maple Syrup, Dark Amber
  • ½ tsp. Baking Soda
  • ½ c. Coconut Flour
  • 1 c. Almond Flour
  • ⅛ c. Water
  • ½ c. White Chocolate Chips (mini or regular sized)
  • ½ c. Macadamia Nuts, cut into halves or fourths
Instructions
  1. Preheat oven to 375°. Place parchment paper over a cookie sheet.
  2. In a large bowl, mix all wet ingredients. Add the dry ingredients and mix in well with the wet ingredients.
  3. Next, add the chocolate chips and the macadamia nuts and fold into the cookie mixture.
  4. Using a cookie scoop, fill each scoop ¾ full and drop cookie batter onto the parchment paper/cookie sheet. Bake for 12 minutes or until slightly golden.
  5. Let cool on a cookie rack for 5 minutes, then eat!
  6. Enjoy!
