Pan Seared Scallops and Sauteed Swiss Chard with Bacon

Ingredients
  • 6 Large Scallops
  • ½ tbsp Butter
  • 4 Strips Bacon
  • 1 Large Bunch of Swiss Chard
  • Salt
  • Pepper
Instructions
  1. Rinse entire bunch of Swiss Chard well and pat dry. Cut into 1 inch strips, removing bottom stem.
  2. Take the 4 strips bacon and cut into 2 inch pieces using kitchen shears. Place bacon pieces onto a heated pan and continue to cook until mostly done.
  3. Once bacon is cooked most of the way, remove the bacon oil from the pan until you are left with only ¼ of the original amount (the bacon should remain on the pan).
  4. Place the swiss chard on the pan with the bacon, mix in with the bacon oil on the pan, and continue to sautee over medium heat until the leaves are well wilted. You can add a large pinch of sea salt and mix in.
  5. Place Swiss Chard aside. (*if Swiss Chard seems too oily, you should use a paper towel to soak up any excess oil. The chard should only be very slightly covered with the bacon oil.)
  6. Rinse the scallops in cold water and thoroughly pat dry.
  7. Season each side of each scallop with pepper and a small amount of sea salt. In a large pan, heat ½ tbsp butter until melted.
  8. Place the scallops onto the pan (make sure that they are not touching) and sear them on high heat for 1½ minutes on each side.
  9. Serve the scallops and the Swiss Chard on a plate together and Enjoy!
