Simple Chocolate Chip Cookies

Ingredients
  • ¾ stick Butter, softened
  • ¾ c. Light Brown Sugar
  • 1 Large Egg
  • 1 tsp. Vanilla Extract
  • ¾ c. Almond Flour (I used Bob's Red Mill)
  • ½ c. Whole Wheat Flour
  • 1 large pinch Sea Salt
  • ¾ c. Semi Sweet Chocolate Chips
Instructions
  1. Preheat oven to 350ºF. Place parchment paper on a cookie sheet.
  2. In a large bowl, mix together the butter and sugar. Mix until completely combined.
  3. Add the egg and vanilla to the mixture and mix until everything is well combined. Next, stir in the flour, salt and chocolate chips.
  4. Using a cookie scooper, scoop ½ scoops of the cookie dough onto the cookie sheet with parchment paper, at least 2 inches apart.
  5. Bake for 8-10 minutes, until the cookies are lightly browned on the edges, and the middle still looks slightly undercooked. Once out of the oven, leave cookies on the baking sheet for 5 more minutes before removing.
  6. After the 5 minutes are up, enjoy a really delicious, less guilty cookie!
