Simple Cod and Sweet Potato Mash

Ingredients
  • 1 Cod Fish Filet (1/2-3/4 lb)
  • 1 Sweet Potato (large)
  • ¾ tbsp. Extra Virgin Olive Oil
  • Dash of Sea Salt (optional)
Instructions
  1. Clean your sweet potato well. Place it into a pot of boiling water and boil it for 20-30 minutes (or until soft inside), let cool for 5 minutes.
  2. Slice the potato open and scoop out the insides into a bowl. The sweet potato should be soft inside and easy to scoop out. The sweet potato will still be hot so be careful while handling it. You can then mash the sweet potato insides with a fork, blend it for a smoother consistency or leave as is.
  3. **Another way to cook the sweet potato is to poke several holes into your sweet potato with a fork. Place the sweet potato on a plate and cook in the microwave for 9 minutes. Let stand for 5 minutes before slicing open and scooping the insides.**
  4. When your sweet potato mash is done - slightly heat the olive oil in a large pan. Place your large Cod filet onto the pan, cover with a lid and cook over low heat for 8 minutes. You will see the Cod fish whiten and separate - do not overcook or else the fish will become tough.
  5. To prepare 2 plates, place ½ of the Cod filet on each plate and some of the sweet potato mash.
  6. Drizzle the fish with a few drops of extra virgin olive oil and a dash of Sea Salt.
