Southwest Chopped Salad

Ingredients
  • Salad:
  • 5-6 Romaine Lettuce Heart Leaves
  • ¼ c. Shredded Cheddar Cheese
  • 3 Tomato Slices, chopped into cubes
  • ¼ c. Onion, chopped
  • ¼ c. Black Beans, canned
  • ¼ c. Red Beans, canned
  • ¼ c. Corn, canned
  • Avocado Dressing:
  • ½ Avocado
  • 1 tbsp. Extra Virgin Olive Oil
  • 1 tbsp. Fresh lemon
  • ¼ tsp. Sea Salt
  • ⅛ tsp. Ground Black Pepper
  • ¼ Garlic Clove, sliced
  • 3 Cilantro sprigs, stems removed
  • 2 tbsp. Filtered Water
Instructions
  1. Prepare avocado dressing - Combine all dressing ingredients in a mini food processor; process until very smooth.
  2. Chop romaine lettuce and place into a salad bowl.
  3. Chop the tomato slices and onion - toss the tomato cubes, onions, black beans, red beans, corn and shredded cheese into the bowl with the lettuce.
  4. Add the avocado salad dressing and mix in well.
  5. Top salad with more ground pepper (optional).
  6. Enjoy!
