Lean Cheeseburger on a Wheat Belly Biscuit

Ingredients
  • Burger:
  • 1 lb. 98% Lean Ground Sirloin
  • 3 Slices Cheddar Cheese
  • Pepper to taste
  • 3 Tomato Slices (optional)
  • 3 Full Onion Slices (optional)
  • 3 Pickles (optional)
  • Biscuits:
  • ½ c. Almond Meal (not almond flour)
  • ½ c. Ground Flaxseed
  • 2 tsp. Baking Powder
  • 2 tbsp. Cold butter, cut into cubes
  • 2 Egg Whites
Instructions
  1. Preheat your oven to 350°F.
  2. Grease a cookie sheet with oil or cooking spray, or line the baking sheet with parchment paper.
  3. In a large bowl, mix together the almond meal, flaxseed, and baking powder. Cut in the butter until combined.
  4. In a medium sized bowl, beat the egg whites on high until soft peaks form. Gently fold the egg whites into the bowl with the dry ingredients until well blended.
  5. Spoon the dough into 3 rounds on the baking sheet. Flatten to ¾ inch thickness. Bake for 15 minutes, or until golden brown.
  6. While biscuits are baking, create 3 burger paddies from the 1lb. ground sirloin by adding pepper (add as much or little as you want here) to the beef and then gently form into 3 balls.
  7. Flatten each to a ¾-1 inch thickness.
  8. You can grill the patties or cook them on your stove range - for cooking it on your range, grease a large pan with oil or cooking spray and place the 3 burger patties on the pan over medium-low heat. Cook each side for about 5 minutes or until desired wellness.
  9. If you would like cheese on your burger, place a slice of cheese on top of each burger 1 minute before the end of the cooking time so that it melts completely.
  10. Once your burgers and biscuits are done, place one biscuit on a plate and put the burger on top of it. Add a tomato slice, some white onion slices, ketchup, and a pickle on the side (or any other toppings that you prefer).
