Peanut Butter Cookies (wheat-free)

Ingredients
  • 1 Egg
  • 1 tsp. Vanilla Extract
  • 1 tsp. Baking Soda
  • 2 tbsp. Maple Syrup
  • ¼ c. Raw Sugar
  • 1½ c. Almond Meal (not almond flour)
  • ¾ c. Creamy Natural Peanut Butter
Instructions
  1. Preheat oven to 350° F.
  2. In a bowl, mix egg, vanilla extract, maple syrup. In another medium sized bowl, mix baking soda, raw sugar and almond meal.
  3. Add wet ingredients from the first bowl to the bowl with the dry ingredients. Add peanut butter, and mix in until all ingredients are well combined.
  4. Put parchment paper on a cookie sheet. Scoop ½ spoonfuls of the cookie batter onto the parchment paper (I like to use a cookie scoop for this part) 2 inches apart. Using a fork, flatten each in a criss-cross pattern. Bake for 8-9 minutes.
  5. Take cookies out of the oven and let cool on a cooling rack - while still on parchment paper.
  6. Enjoy!!
