Bacon Wrapped Chicken Strips

Ingredients
  • 3 Boneless Skinless Chicken Breasts (about 1.5 lbs)
  • 12 strips Bacon (see notes below)
  • ½ tsp. Ground Black Pepper
  • ½ tsp. Chili Powder
  • ½ tsp. Honey
  • ½ tsp. Water
Instructions
  1. Preheat oven to 400°
  2. Pound each chicken breast with a meat tenderizer until flattened to 1.5 inch thickness.
  3. Mix the pepper and chili powder together and rub into each chicken breast.
  4. Cut each chicken breast into 4 diagonal strips.
  5. Wrap one bacon strip around each strip of chicken. (You may need to tuck in the ends of each strip).
  6. Mix the honey and water together in a small bowl.
  7. Brush the mixture onto the top and sides of each bacon/chicken strip.
  8. Place the strips onto a flat roasting rack and bake for 7 minutes, flip, then bake for another 5 minutes.
  9. Turn the oven up to broil and cook for an additional 2 minutes on each side, or until the bacon becomes crispy.
Notes
* Bacon - try comparing the bacon you find at the store and get the one that has the least amount of ingredients and sodium, and that is made from pork raised without antibiotics. Whole foods sells a good option that is free of added nitrates as well.
