Healthy Lunch Salad

Ingredients
  • 4-5 leaves Romaine Lettuce, chopped (use romaine hearts)
  • 2 Cremini Mushrooms, chopped
  • 4 Grape Tomatoes, quartered
  • ⅓ Zucchini, chopped
  • ⅛ c. Roasted/Unsalted Sunflower Seeds
  • ¼ c. Shredded Cheddar Cheese
  • ⅛ tsp. Ground Black Pepper
  • 2 tsp. Dressing (1 tsp. extra virgin olive oil + 1 tsp. apple cider vinegar)
Instructions
  1. Clean each vegetable well.
  2. Chop all veggies and place into a bowl (or Pyrex container to take to work!)
  3. Add the pepper and dressing, then toss to mix in well.
  4. Enjoy!
Notes
Add some sliced avocado or chicken to switch it up!
