Blueberry Coconut Chia Seed Pudding

Ingredients
  • ¾ c. Light Coconut Milk (from can)
  • ⅛ c. Chia Seeds
  • 1 tsp. Honey
  • ¼ tsp. Vanilla Extract
  • ¼ tsp. Almond Extract
  • 16 Fresh Blueberries
Instructions
  1. Mix all ingredients (except blueberries) together in a bowl.
  2. Cover bowl and place in refrigerator overnight.
  3. The next morning, mix up the pudding with a spoon.
  4. Add blueberries and enjoy!
