I love this recipe. It is sweet and filling, and great for breakfast or as a snack any time of the day. It is also packed with antioxidants and fiber from the chia seeds.
Coconut Mango Chia Seed Pudding

Ingredients
- 1 c. Lite Coconut Milk
- 2 tsp. Chia Seeds
- ½ Fresh Ripe Mango, cubed
- 1 tsp. Agave Syrup
- ¼ c. Raw Slivered Almonds
Instructions
- In a medium bowl, combine the coconut milk, chia seeds and agave syrup, and mix well.
- Mix in the cubed mango and the almonds.
- Cover the top of the bowl with saran wrap and refrigerate overnight.
- Enjoy the next morning!
Notes
* You can add additional fresh mango on top before eating.
