This recipe is not only easy and delicious, it is a great healthier replacement for typical Chicken Parmesan. You can add more spices if you like but this dish does not need much! I also feel that these types of dishes taste even better the next day.
Chicken Mozzarella

Ingredients
- 1.5 lb Boneless Skinless Chicken Breasts
- 1 Jar of Marinara Sauce, 25 oz. (I like Whole Foods' 365 Organic Marinara Pasta Sauce)
- 1 c. Shredded Mozzarella Cheese
- ½ c. Grated Parmesan Cheese
- 2 tbsp. Salt-Free Poultry Seasoning
- ½ tsp Ground Black Pepper
- ¼ tsp. Paprika
- ¼ tsp. Granulated Onion (optional)
- ¼ tsp. Granulated Garlic (optional)
Instructions
- Preheat oven to 400°
- Cut each chicken breast in half. Using a meat tenderizer, pound chicken to flatten to a little larger than ¼ inch thickness (not too flat)
- Cut the chicken breasts in half again
- Mix spices in a small bowl and then rub into the chicken
- Lightly grease a pan, place chicken breasts in pan
- Pour the marinara sauce into the pan and spread throughout
- Push off some of the marinara area sauce that may be burying the chicken breasts and top each equally with mozzarella cheese
- Sprinkle the Parmesan cheese over the chicken as well and sprinkle some throughout the sauce areas as well.
- Place in the oven and bake for 40 minutes.
- Remove from the oven and let cool for 10 minutes.
- Serve yourself and enjoy!
