Happy 2017 everyone! Sorry that I have not posted anything in a while, but we bought a house, moved in, have been doing renovations and were without a kitchen for several weeks so I’ve been behind on creating new recipes. So here is my first post of the year, a delightful way to eat your broccoli and cauliflower. These two vegetables are great to eat just steamed but it’s also fun to change things up a bit sometimes. I hope you enjoy it!
Cheesy Broccoli and Cauliflower Bake

Serves: 6
Ingredients
- 3 tbsp. Coconut Milk (canned)
- ¼ c. Parmesan Cheese, grated
- ¾ c. Shredded Cheddar Cheese
- ¼ tsp. Ground Black Pepper
- ¼ tsp. Granulated Garlic
- 1 Head Cauliflower
- 1 Head Broccoli
Instructions
- Preheat oven to 400° F
- Rinse the broccoli and cauliflower well, pat dry with paper towel, then chop and place into a large bowl.
- In a small bowl mix all of the spices and coconut milk. Pour onto the cauliflower and broccoli and toss to coat.
- Place the chopped pieces into a casserole dish.
- Sprinkle on the Parmesan and Cheddar cheeses, then lightly toss again.
- Cover the casserole dish with tin foil, place in oven and bake for 25 minutes.
- Remove from oven, let cool slightly and then enjoy!
