These cookies are super good, just made them up on a whim. This was my first time using carob chips and the mix between the carob and the coconut is great! They are also low in sugar. Give them a try! 🙂
Carob Chip and Coconut Cookies

Ingredients
- 2 Large Eggs
- ⅓ c. Coconut Oil, Liquid
- ¼ c. Maple Syrup
- ½ tsp. Baking Soda
- ½ c. Coconut Flour
- 1 c. Almond Flour
- ⅛ c. Water
- ½ c. Carob Chips, Unsweetened (or chocolate chips)
- ¼ c. Shredded Coconut Flakes, Unsweetened
Instructions
- Preheat oven to 375° F. Place parchment paper over a cookie sheet.
- In a large bowl, mix all wet ingredients. Add the dry ingredients (except carob chip and shredded coconut) and mix in well with the wet ingredients.
- Now add the carob chips and the shredded coconut and fold into the cookie mixture.
- Using a cookie scoop, fill each scoop ¾ full and drop cookie batter onto the parchment paper/cookie sheet. Bake for 10 minutes or until slightly golden.
- Let cool on a cookie rack for 5 minutes before eating.
- Enjoy!
