Blueberry Coconut Chia Seed Pudding
Serves: 2
Ingredients
- ¾ c. Light Coconut Milk (from can)
- ⅛ c. Chia Seeds
- 1 tsp. Honey
- ¼ tsp. Vanilla Extract
- ¼ tsp. Almond Extract
- 16 Fresh Blueberries
Instructions
- Mix all ingredients (except blueberries) together in a bowl.
- Cover bowl and place in refrigerator overnight.
- The next morning, mix up the pudding with a spoon.
- Add blueberries and enjoy!
